Are you eating the right colors? - Recipe: Baked Egg in Tomato

We’re 100% sure this is something you’ve heard before:

“You need to eat your vegetables.”

We know it sounds cliché, it’s one of the oldest bits of advice in the book…but there are benefits to eating veggies that you may not know about.

The color of the vegetables you eat really cannot be overstated.

Because depending on the health goals you’ve set for yourself, picking veggies of a certain color can have a major impact on your health.

Take carrots and sweet potatoes for example, they get their orange color from carotenoids…

Recipe: Baked Egg in Tomato

Baked egg-stuffed tomatoes

Prep time: 35 min.

Ingredients:

4 large (8 ounce) tomatoes 2 cloves of garlic, chopped
Olive oil Salt and pepper, to taste
4 large eggs 3 Tbsp Parmesan cheese
Fresh basil, for garnish

Directions:

The first step is to get your oven preheated to 400 degrees.

Now, while that’s going, slice the top quarter off each of your tomatoes. Using a paring knife or a spoon, scoop out the core of the tomato.

When that’s done, place them in a baking pan that’s 2-inches deep and lined with parchment paper. Sprinkle them with some salt, pepper, and chopped garlic. And last, but not least, drizzle some olive oil right on top.

Place them in the oven for 20 minutes, or until the tomatoes have begun to break down ever so slightly.

Once that happens, remove the pan from the oven. Now’s where the eggs come into play.

Carefully crack one egg into each tomato. Don’t worry about the egg whites dribbling over the sides. Return your pan to the oven for another 6-8 minutes (or until the yolks have begun to set.)

Next, remove the pan from the oven and top your concoction with some parmesan cheese. Pop everything back in one more time, for just a minute or two.

This will add a wonderful crispness to the cheese and make everything so much more flavorful. Just top them with some basil and you’re ready to go.

You can serve these warm, or at room temperature.

Not only is this recipe healthy, and delicious, it’s extremely simple.
